mamma's skinny quesadillas
I was craving Mexican food today. My husband and I collaborated to come up with this tasty low-fat recipe. I hope you all enjoy it as much as we did!
Blue Ribbon Recipe
These quick and easy quesadillas may be a lightened-up recipe, but they're big in flavor. The seasoning on the chicken is a typical Mexican seasoning, but adding Creole spice too gives it a little something different. Lime juice adds a nice zing. The chicken breasts alone are so good we found ourselves sneaking bites and hoping we had enough left for the quesadilla. Layering the little bit of cheese, chicken, and black beans means layers of goodness inside the low-carb tortillas.

Ingredients
- SPICE MIX FOR CHICKEN
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 1 teaspoon Creole seasoning
- - salt and pepper, to taste
- 1 pound chicken breasts
- 1 tablespoon olive oil
- 1/2 - lime
- SKINNY QUESADILLAS
- 5 - whole wheat low-carb tortillas
- 2 cups shredded Mexican blend cheese, low-fat
- 1 can reduced sodium black beans (15 oz)
- - reduced fat sour cream
- - salsa (see my recipe for mamma's homemade salsa)
How To Make mamma's skinny quesadillas

Step 1Mix together dry ingredients in spice mix.

Step 2Sprinkle spice mix on both sides of the chicken breasts.

Step 3Cook chicken on both sides in olive oil in a saute pan until done. Squeeze lime juice on chicken once cooked and turn off the heat.

Step 4Clean out saute pan and cut the chicken into small pieces.

Step 5Drain and rinse black beans and pat dry.

Step 6Cook quesadillas one tortilla at a time. Fold tortilla in half. Place in saute pan and open. Sprinkle some cheese on half of the tortilla.

Step 7Then add chicken.

Step 8Sprinkle in some beans.

Step 9Add more cheese.

Step 10Fold the tortilla over so that both halves are surrounding them yummy chicken, beans, and cheese.

Step 11Place lid on saute pan. Cook each tortilla covered for about 2 minutes. Then carefully flip, replace lid, and cook for about one more minute.

Step 12Place each quesadilla on its own plate and top with sour cream and salsa. Cut in half, thirds, or quarters, and enjoy!
