This is a quick, easy to make healthy meal on busy weeknights. It's 7 SP (Weight Watcher) for one serving. I usually double the recipe for my family of 6 and then have leftovers for lunch the next day.

Ingredients
- 1/2 tablespoon olive oil
- 1 pound ground chicken
- 2 cloves garlic
- 1 - onion, diced
- 1/4 cup hoisin sauce
- 2 tablespoons low sodium soy sauce
- 1 tablespoon rice wine vinegar
- 1 tablespoon ginger, freshly grated
- 1 teaspoon sriracha
- 1 can 8oz water chestnuts, drained and diced
- 2 - green onions, thinly sliced
- 1 - head butter lettuce
How To Make lettuce wraps

Step 1Heat olive oil in non-stick pan over medium high heat Add ground chicken, brown and crumble. Drain excess fat.

Step 2Combine in a small bowl garlic, hoisin sauce, soy sauce, vinegar, ginger and Sriracha. Mix to combine.

Step 3Add onion to chicken, mix together. Pour in hoisin mixture and cook for two minutes until onions are translucent. Stir in chestnuts and green onions. Stir and cook for another minute.

Step 4Serve on pieces of lettuce.
