kickin chicken bombs
This is my son's favorite meal. He swears he could eat it every day :) It's a sure thing! Everyone LOVES it! Let me know what you think.

Ingredients
- 8 - chicken breasts, boneless and skinless
- 4 large jalapeno peppers
- 8 slices bacon
- 1 package cream cheese
- 1 teaspoon cayenne pepper
- 1 teaspoon garlic
- 1 teaspoon salt
- 1 package mexican blend shredded cheese
- 1/4 cup franks hot sauce or hot sauce of choice (optional)
How To Make kickin chicken bombs

Step 1Pre heat oven to 375

Step 2Then you need to flatten your chicken breast. Simply butterfly cut it and lay flat between parchment paper. I use a rolling pin to beat it thin. about 5 cm (guessing)

Step 3Cut of tops, slice in half and remove seeds from the jalapenos. You can wash them if you prefer a more mild taste.

Step 4Set Bacon aside. In a bowl mix together remaining ingredients except hot sauce until well incorporated.

Step 5Fill jalapenos with cheese mixture dividing it evenly between the 8 half's. They should be heaping full.

Step 6Place filled jalapeno in the center of the chicken breast and fold the chicken around the pepper. Wrap the bacon around the chicken and place on a baking sheet almost touching. You do not need to use toothpick to hold them together. Just make the bacon end on the bottom.

Step 7Bake @ 375 for about 45 min until oozing cheese and bacon is nicely browned

Step 8Optional end step: 5 mins before done brush chicken with Hot sauce. My family prefers Franks. You could also sprinkle a bit of shredded cheese on top with some chives
