My family and I decided to try out the Keto diet. We saw that we could have as much pork rinds as we wanted so I came up with this recipe.

Ingredients

  • 6
    chicken breasts, boneless and skinless
  • 1 bag(s)
    pork rinds, original
  • 1 c
    Parmesan cheese
  • 1 jar(s)
    spaghetti sauce, 24 oz
  • 2
    eggs
  • 1 c
    mozzarella cheese

How to Make Keto Friendly Chicken Parm

Step-by-Step

  1. Crush pork rinds into crumbs. Add Parmesan and pour into a wide bowl.
  2. Crack eggs into a bowl and whisk until blended.
  3. Dip chicken breasts into eggs.
  4. Then into the crumb mixture.
  5. Lay onto a parchment paper lined baking sheet and continue until all chicken breasts are coated in the "breading".
  6. Bake at 350 degrees for 1 hour or until chicken is no longer pink inside.
  7. Spoon a little sauce onto the top of chicken breasts. Sprinkle mozzarella cheese over the top of sauce.
  8. Put back into oven to melt the cheese about 5 minutes.
