keto friendly chicken parm
My family and I decided to try out the Keto diet. We saw that we could have as much pork rinds as we wanted so I came up with this recipe.

Converting a traditional recipe to a Keto-friendly recipe takes a few adjustments and this recipe is a great example of how to do it. Crushed pork rinds are an alternative to bread crumbs for coating chicken. Brandy opted to bake the chicken breasts until they were crisp and golden brown, instead of frying, so this is a very easy chicken parmigiana recipe. There is not a lot of seasoning on the chicken but the cheese and sauce add flavor. Keeping carbs in mind, we opted for a lower sugar spaghetti sauce and served everything over zoodles. Another Keto-friendly option is sliced and steamed zucchini or cauliflower rice.
Ingredients
- 6 - chicken breasts, boneless and skinless
- 1 bag pork rinds, original
- 1 cup Parmesan cheese
- 1 jar spaghetti sauce, 24 oz
- 2 - eggs
- 1 cup mozzarella cheese
How To Make keto friendly chicken parm

Step 1Crush pork rinds into crumbs. Add Parmesan and pour into a wide bowl.

Step 2Crack eggs into a bowl and whisk until blended.

Step 3Dip chicken breasts into eggs.

Step 4Then into the crumb mixture.

Step 5Lay onto a parchment paper lined baking sheet and continue until all chicken breasts are coated in the "breading".

Step 6Bake at 350 degrees for 1 hour or until chicken is no longer pink inside.

Step 7Spoon a little sauce onto the top of chicken breasts. Sprinkle mozzarella cheese over the top of sauce.

Step 8Put back into oven to melt the cheese about 5 minutes.
