italian essentials: easy/peasy mozzarella chicken

This is a simple dish that my Aunt Josephine always made six at a time in large glass baking dishes and served it family style with freshly made Italian bread. Ah, the memories. I am making it in individual baking dishes, because I love the presentation… We eat first with our eyes. This is an easy/peasy dish to make with ingredients you probably have lurking about your kitchen. I added a few optional items, but if you do not have them, no worries. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 1/4 cup marinara sauce, homemade, or store bought
  • 1 large chicken breast, skinless, boneless
  • 1/8 teaspoon dried basil
  • 1/8 teaspoon dried parsley
  • 1/8 teaspoon dried oregano
  • 1/8 teaspoon salt, kosher variety, fine grind
  • 5 - 6 pitted green olives, sliced
  • 1/4 cup mozzarella cheese, sliced or shredded
  • OPTIONAL ITEMS
  • 1/4 medium red or green bell pepper, diced
  • 2 slices prosciutto
  • freshly shredded parmesan cheese, for garnish

    PREP/PREPARE
  • Step 2
    You will need a small ovenproof dish to make this recipe.
  • Step 3

  • Step 4
    Gather your ingredients (mise en place).
  • Step 5
    Place rack in the middle position, and preheat the oven to 360f (185c).
  • Step 6
    Add the marinara sauce to the bottom of the baking dish.
  • Step 7
    Place the chicken breast on top of the sauce.
  • Step 8
    Sprinkle with the dry spices, and salt
  • Step 9
    Add the chopped olives.
  • Step 10
    Add the bell peppers, if using
  • Step 11
    Cover with the prosciutto, if using.
  • Step 12
    Cover with the cheese.
  • Step 13
    Place into the preheated oven until the chicken is cooked through, and the cheese is bubbly, and beginning to brown, about 25 – 27 minutes.

    PLATE/PRESENT
  • So yummy

    Top with some freshly shredded parmesan cheese, and serve while nice and hot with some crusty bread, and other sides. Enjoy.
