healthy shrimp-chicken fajitas
This is one "healthy" recipe your whole family will love! Even my husband and sons, who aren't fond of "diet" food will tell me how good these are. Of course, they might have two or three, though! These are full of flavor and I like to serve with black beans... (feel free to change out the low-carb tortillas or sour cream to full fat if you'd rather)

Ingredients
- 1 tablespoon cooking oil
- 1 small oinion, sliced
- 1 pound cleaned, uncooked shrimp
- 1 pound chicken, sliced in thin strips
- 1 - red bell pepper, cut in strips
- 1 - green bell pepper, cut in strips
- 1 - small zuchinni, cut in thin strips
- 1 teaspoon minced garlic
- 2 tablespoons lime juice (i like a little more)
- 2 tablespoons soy sauce
- 1 tablespoon dry taco seasoning mix
- - salt and pepper
- - shredded cheese
- - light sour cream
- - low-carb tortillas (i love the tortilla factory brand)
How To Make healthy shrimp-chicken fajitas

Step 1In large skillet, on med-high heat, cook onion in oil. After onion begins to get soft, add chicken and continue cooking until chicken no longer has any pink. Drain any liquid.

Step 2Add bell pepper, zuchinni, garlic, lime juice, soy sauce, and taco seasoning mix. Cook until pepper softens a bit and then add the shrimp. Cook just until shrimp is pink. Season with salt and pepper according to taste.

Step 3On tortilla, place large spoonful of mixture in center, sprinkle cheese and a dollop of sour cream. You can also put some salsa and guacamole if you desire.
