The cayenne pepper gives the chicken a nice kick and the avocado lends a nice creamy texture. Yummy!

Ingredients

  • 1 tsp
    lower sodium salt
  • 1/4 tsp
    pepper
  • 1/4 tsp
    or more, cayenne pepper
  • 4
    boneless, skinless chicken breasts
  • 2 Tbsp
    olive oil
  • 1
    red onion, diced
  • 3 Tbsp
    lemon juice
  • 1 large
    ripe avocado, diced.
  • ·
    salt and pepper to taste

How to Make Healthy avocado chicken

Step-by-Step

  1. In small bowl, combine salt, pepper, and cayenne pepper. Rub evenly into chicken breasts.
  2. Heat oil in lg skillet over medium heat. Add chicken to skillet and cook 5-7 min each side, or until no longer pink in the middle.
  3. In bowl, stir together red onion, lemon juice and avocado. Season w/ salt & pepper. Spoon avocado mix over chicken.
