The cayenne pepper gives the chicken a nice kick and the avocado lends a nice creamy texture. Yummy!

Ingredients

  • 1 teaspoon lower sodium salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon or more, cayenne pepper
  • 4 - boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 - red onion, diced
  • 3 tablespoons lemon juice
  • 1 large ripe avocado, diced.
  • - salt and pepper to taste

How To Make healthy avocado chicken

  • Step 1
    In small bowl, combine salt, pepper, and cayenne pepper. Rub evenly into chicken breasts.
  • Step 2
    Heat oil in lg skillet over medium heat. Add chicken to skillet and cook 5-7 min each side, or until no longer pink in the middle.
  • Step 3
    In bowl, stir together red onion, lemon juice and avocado. Season w/ salt & pepper. Spoon avocado mix over chicken.
