Ingredients
- 1 box whole wheat or whole grain lasagna noodles
- 5 cups cooked, chopped chicken
- 2 - chopped plum tomatoes
- 1/2 cup red onion, chopped
- 2 teaspoons minced garlic
- 2 cups reduecd-fat, shredded italian-style cheese
- 1 - 10 oz container lite cottage cheese, like 1% fat
- 2 cups sliced fresh mushrooms
- 3 cups light alfredo sauce
- 6 slices provolone cheese
- 2 teaspoons dried parsley
How To Make healthy alfredo chicken lasagna

Step 1Heat oven to 425. Spray a 9" x 13" baking pan w/ cooking spray. Cook lasagna noodles as directed, drain and cool.

Step 2Place noodles in a bowl w/ 1 tbsp olive oil, to prvent sticking. In lg bowl, combine chicken, tomatoes, onion, and mushrooms. Add cottage cheese, shredded Italian cheese, and garlic. Mix well.

Step 3Ladle 1 scoop alfredo sauce into bottom of pan. Place 3 noodles on top of sauce. Then add a scoop of chicken mix on top of noodles. Repeat layers. Top w/ provolone slices. Sprinkle w/ parsley. Cover pan w/ foil and bake 30 mins. Remove foil and bake 15 min, or until bubbly and cheese is melted.
