Ingredients For grilled chicken over stir-fried glass noodles
FOR THE CHICKEN
boneless skinless chicken thighs or breasts (trimmed of visible fat)
FOR THE NOODLES
(8 oz.) glass noodles
head cabbage, very thinly sliced
carrots, cut into matchstick size
frozen english peas
green onions, sliced
How To Make grilled chicken over stir-fried glass noodles
Gather and prep ingredients ahead of time!
Place chicken in bag with soy sauce & garlic, marinate for a couple of hours.
Remove chicken from marinate and grill over medium heat for about 8 minutes per side or until fully cooked. Set aside,. keep warm.
Meanwhile, prepare glass noodles according to package directions. Rinse under cold water and set aside.
Heat 2 Tbsp. peanut oil in wok or nonstick skillet.
Add garlic and ginger. Stir-fry over medium high heat for 30 seconds or so.
Add peas, carrots, and cabbage. Stir-fry 1 minute.
Add noodles, chicken broth and soy sauce. Stir over medium heat until all ingredients are combined and heated through.
To plate. Put a layer of noodles and veggies on plate. Slice 1 piece of chicken into strips and lay over top of noodles. Sprinkle with green onion. Serve!
