Ingredients

  • 2
    whole chicken breasts, boneless and skinless
  • ·
    salt and pepper, to taste
  • ·
    paprika, to taste
  • 1
    egg yolk
  • 1/2 c
    honey
  • 1/4 c
    dark rum
  • 1/2 c
    chicken broth
  • 2 clove
    garlic, minced
  • 1/4 c
    preserved ginger, chopped (candied ginger)
  • 1/4 tsp
    nutmeg, ground

How to Make Ginger Chicken

Step-by-Step

  1. Preheat oven to 375F. Coat a baking dish with nonstick cooking spray.
  2. Season chicken with salt, pepper, and paprika to taste and place in shallow roasting pan.
  3. Beat egg yolk until light. Add honey, rum, and chicken stock. Stir in garlic, ginger, and nutmeg. Pour over chicken.
  4. Bake for 45 to 60 minutes, basting every 15 minutes.
