Ingredients
- 2 - whole chicken breasts, boneless and skinless
- - salt and pepper, to taste
- - paprika, to taste
- 1 - egg yolk
- 1/2 cup honey
- 1/4 cup dark rum
- 1/2 cup chicken broth
- 2 cloves garlic, minced
- 1/4 cup preserved ginger, chopped (candied ginger)
- 1/4 teaspoon nutmeg, ground
How To Make ginger chicken

Step 1Preheat oven to 375F. Coat a baking dish with nonstick cooking spray.

Step 2Season chicken with salt, pepper, and paprika to taste and place in shallow roasting pan.

Step 3Beat egg yolk until light. Add honey, rum, and chicken stock. Stir in garlic, ginger, and nutmeg. Pour over chicken.

Step 4Bake for 45 to 60 minutes, basting every 15 minutes.
