Ingredients

  • 2 - whole chicken breasts, boneless and skinless
  • - salt and pepper, to taste
  • - paprika, to taste
  • 1 - egg yolk
  • 1/2 cup honey
  • 1/4 cup dark rum
  • 1/2 cup chicken broth
  • 2 cloves garlic, minced
  • 1/4 cup preserved ginger, chopped (candied ginger)
  • 1/4 teaspoon nutmeg, ground

How To Make ginger chicken

  • Step 1
    Preheat oven to 375F. Coat a baking dish with nonstick cooking spray.
  • Step 2
    Season chicken with salt, pepper, and paprika to taste and place in shallow roasting pan.
  • Step 3
    Beat egg yolk until light. Add honey, rum, and chicken stock. Stir in garlic, ginger, and nutmeg. Pour over chicken.
  • Step 4
    Bake for 45 to 60 minutes, basting every 15 minutes.
