ellen's chicken fried rice
I had been thinking of stir fry and then I thought of chicken fried rice--my favorite thing in Asian cuisine. I had all the ingredients I needed so I threw this recipe together. It is marvelous! I'm going back for seconds! 09-08-15

Ingredients
- 1 tablespoon cooking oil
- 2 - chicken breasts, boneless and skinless, cut into bite-size pieces
- 1½ cups peas and carrots, frozen
- 1 medium onion, chopped
- 3 or 4 cloves garlic, minced
- 2 - eggs, beaten
- ½ cup low-sodium soy sauce
- 4 cups cooked rice
How To Make ellen's chicken fried rice

Step 1Cook the rice according to package directions; drain, set aside.

Step 2Brown the chicken pieces in hot oil in large skillet over medium heat. After two or three minutes, add onion. Stir frequently.

Step 3When onion becomes translucent, add garlic and peas and carrots. Stir to mix. Add rice, eggs, and soy sauce. Mix thoroughly and let simmer over low heat until heated through.

Step 4If needed, add more soy sauce for desired consistency. Serve immediately.
