elaine's chicken diablo two
This is an easy small dish for 1 or 2 people. I get my chicken thighs from a local organic farmer and the thighs are a generous size. I find the supermarket thighs are quite small so you might want to use 3. I used a baking dish about 5" by 7". Cleanup is easy - prep. and baking all in one dish. You could use parchment in the bottom and sides of the baking dish if you like. The sauce is great with rice. Add a green salad and you have an easy, healthy meal. Double or triple the recipe if you like.

Ingredients
- 2 - boneless, skinless chicken thighs or 6 chicken tenders
- 1 tablespoon butter
- 1 tablespoon honey
- 1/2 tablespoon mustard, your choice (I prefer Dijon)
- 1/2 teaspoon curry powder
- 2 pinches salt
How To Make elaine's chicken diablo two

Step 1Heat oven to 375 degrees F.

Step 2In a small microwave-safe baking dish melt the butter and honey for 30 seconds. Add the mustard, curry powder and salt. And mix with a fork until combined.

Step 3Dip the chicken thighs in the mixture covering both sides of the thighs. Put the thighs into the dish with the smooth side up.

Step 4Bake in the preheated oven until internal temperature is 165 degrees F - about 30 minutes (20 min. for chicken tenders). Check temperature after 20 minutes.

Step 5(Optional) Baste half way through baking.

Step 6Remove from the oven and cover with foil and allow to stand for 10 minutes. Serve with the baking sauce poured over top.
