easy on the budget chili casserole
My dad used to make this when I was a kid. He always said it was a cheaper, quicker way to make a delicious chili.And usually I have these items on hand anyway. Goes great with some homemade cornbread.

Ingredients
- 1 - 15.5oz can, bush's black bean chili beans
- 1 - 14.5oz can, diced tomatoes
- 2 cups cooked white rice
- 2 cups cooked chicken breast, chopped
- 1/2 teaspoon cumin
- 1/2 teaspoon chili seasoning
- 1 cup mexican blend shredded cheese
How To Make easy on the budget chili casserole

Step 1Heat oven to 350. Spray a 2-quart casserole dish w/ cooking spray.

Step 2In lg bowl combine beans, tomatoes with the juices, rice, chicken, cumin and chili seasoning. Spoon into casserole dish.

Step 3Sprinkle top w/ cheese. Cover with foil. Bake 25 mins. Remove foil and bake 10 additional mins or until lightly browned on top.
