Ingredients

  • 2 - boneless, skinless chicken breasts
  • 1 pinch salt
  • 1 can (6 oz) marinated artichoke hearts
  • 1 1/2 cups cremini mushrooms
  • 1 - scallion
  • 1/2 cup white wine
  • 1/4 cup heavy cream
  • 1 teaspoon lemon zest
  • 1/2 teaspoon italian seasoning
  • 1 pinch ground black pepper

How To Make easy artichoke chicken

  • Step 1
    Preheat broiler, rack high.
  • Step 2
    Line sheet pan with foil.
  • Step 3
    Cut chicken into bite sized pieces and space them on the foil.
  • Step 4
    Sprinkle with salt.
  • Step 5
    Reserve the marinade and cut the artichokes in fourths and space them and the mushrooms on the foil. Leave no spaces. There may be overlapping.
  • Step 6
    Slice scallions into 1/2 inch rounds, using only the whites and the light green parts. Sprinkle them lightly over the whole.
  • Step 7
    In 2 cup measuring cup, whisk together 1/2 cup of the reserved artichoke marinade, wine, cream, lemon zest, Italian seasoning, pinch of salt and pepper.
  • Step 8
    Pour liquid over everything.
  • Step 9
    Broil, tuning pan once, for 10 to 15 minutes.
  • Step 10
    Serve hot.
