Ingredients
- 2 - boneless, skinless chicken breasts
- 1 pinch salt
- 1 can (6 oz) marinated artichoke hearts
- 1 1/2 cups cremini mushrooms
- 1 - scallion
- 1/2 cup white wine
- 1/4 cup heavy cream
- 1 teaspoon lemon zest
- 1/2 teaspoon italian seasoning
- 1 pinch ground black pepper
How To Make easy artichoke chicken

Step 1Preheat broiler, rack high.

Step 2Line sheet pan with foil.

Step 3Cut chicken into bite sized pieces and space them on the foil.

Step 4Sprinkle with salt.

Step 5Reserve the marinade and cut the artichokes in fourths and space them and the mushrooms on the foil. Leave no spaces. There may be overlapping.

Step 6Slice scallions into 1/2 inch rounds, using only the whites and the light green parts. Sprinkle them lightly over the whole.

Step 7In 2 cup measuring cup, whisk together 1/2 cup of the reserved artichoke marinade, wine, cream, lemon zest, Italian seasoning, pinch of salt and pepper.

Step 8Pour liquid over everything.

Step 9Broil, tuning pan once, for 10 to 15 minutes.

Step 10Serve hot.
