cilantro chicken wraps

A local coffee house sells these wraps for $6. I crave them all the time so I make my own and this is my version- slightly different but even better I think. Serve with chips and a big glass of fruit tea.

Ingredients

  • 3 - chicken breasts, cooked and shredded
  • 6 - large flour tortillas
  • SMOKY CUMIN SOUR CREAM SAUCE
  • 1 1/2 cups sour cream
  • 3 tablespoons buttermilk
  • 1/4 teaspoon salt
  • 3/4 teaspoon garlic powder
  • 3/4 teaspoon onion powder
  • 1 1/2 teaspoons ground cumin
  • 1/4 teaspoon smoked paprika
  • 1/4 teaspoon chili powder
  • BLACK BEAN SALSA
  • 1 can black beans, rinsed and drained
  • 1/2 - sweet onion, diced
  • 2 - tomatoes, seeded and diced
  • small handful of cilantro, chopped (about 1/3 cup)
  • 1 - lime wedge

How To Make cilantro chicken wraps

  • Step 1
    Combine ingredients for sour cream sauce in a small bowl and stir well.
  • Step 2
    Make the salsa: In a bowl combine beans, onion, tomato and cilantro. Squeeze lime juice over top and stir.
  • Step 3
    Assemble the wraps: Place some of the shredded chicken in the middle of a tortilla, and top with sour cream sauce. Spoon some of the black bean salsa on top. Fold one side of the tortilla over the filling, tuck in the ends, and roll up the rest of the way. Enjoy! Notes: You could easily get 8 wraps with this recipe- just depends on how much filling you use for each. After making the wraps, I usually have some extra sour cream sauce so I like to mix it with shredded cheddar cheese and serve as a dip with tortilla chips.
