Ingredients
- 1 tablespoon butter
- 3 tablespoons olive oil, divided
- 8 ounces shiitake mushrooms, sliced
- 4 cloves garlic, minced
- 1 large shallot, chopped
- 4 bone-in chicken thighs
- salt and pepper
- sweet paprika
- 1/3 cup dry white wine
- 1/2 cup chicken stock
- 1/4 cup heavy cream
- 2 tablespoons white miso
- 1 fresh thyme sprig
- fresh parsley, for garnish
How To Make chicken with miso mushroom cream sauce

Step 1Add the butter and two tbsp olive oil to a pan and once butter is melted add the mushroom, garlic and shallots and cook until mushrooms are browned remove to a plate and set aside.

Step 2Season the chicken with salt, pepper and paprika. Add the remaining tbsp of olive oil and add the chicken skin side down. Cook until browned about 8 minutes. Turn the chicken over and drain out most of the fat. add the wine and chicken stock. Transfer the skillet to a preheated oven to 375 degrees. Let cook about 6 more minutes. Remove from the oven and place the chicken on a plate and set aside.

Step 3Add the mushrooms back to the pan and add the heavy cream and miso paste and thyme sprig. Cook until miso is melted. Taste and adjust for seasoning. Add the chicken back to the pan.

Step 4Serve over mashed potatoes. Garnish with parsley
