chicken with ginger glaze
This recipe is very simple to make and delicious to eat! I love the addition of the pecan chips--they give it a pleasant crunch. You can also use crumbled almonds, cashews or walnuts, whichever you prefer or you can leave the nuts out altogether.

Ingredients
- 4 boneless, skinless chicken breasts
- 1 package uncle ben's long grain & wild rice, fast cook
- 1/2 cup chicken broth
- 1/2 cup brown sugar
- 1/4 cup dijon mustard
- 1/4 cup honey
- 1/4 cup pecan chips
- 1-1/2 teaspoon ginger powder
- salt and pepper to taste
How To Make chicken with ginger glaze

Step 1Salt and pepper the chicken to your taste. In a large, non-stick skillet brown chicken and cook, covered, until done, about 40 minutes for large breasts, 30 for small.

Step 2Prepare the rice mix according to directions on the package.

Step 3Mix together chicken broth, brown sugar, Dijon mustard, honey, ginger and pecans in a saucepan.

Step 4Stir mixture constantly over medium heat until it forms a glaze. Remove from heat and set aside.

Step 5When chicken is done, drizzle it with the glaze and serve with the rice.
