This recipe is very simple to make and delicious to eat! I love the addition of the pecan chips--they give it a pleasant crunch. You can also use crumbled almonds, cashews or walnuts, whichever you prefer or you can leave the nuts out altogether.

Ingredients

  • 4 boneless, skinless chicken breasts
  • 1 package uncle ben's long grain & wild rice, fast cook
  • 1/2 cup chicken broth
  • 1/2 cup brown sugar
  • 1/4 cup dijon mustard
  • 1/4 cup honey
  • 1/4 cup pecan chips
  • 1-1/2 teaspoon ginger powder
  • salt and pepper to taste

How To Make chicken with ginger glaze

  • Step 1
    Salt and pepper the chicken to your taste. In a large, non-stick skillet brown chicken and cook, covered, until done, about 40 minutes for large breasts, 30 for small.
  • Step 2
    Prepare the rice mix according to directions on the package.
  • Step 3
    Mix together chicken broth, brown sugar, Dijon mustard, honey, ginger and pecans in a saucepan.
  • Step 4
    Stir mixture constantly over medium heat until it forms a glaze. Remove from heat and set aside.
  • Step 5
    When chicken is done, drizzle it with the glaze and serve with the rice.
