chicken stroganoff
This is a recipe that is quick to prepare, especially if you cut the chicken up beforehand. Healthier than beef stroganoff, but a similar taste!

Ingredients
- 4 - boneless, skinless chicken breasts
- 2 tablespoons onions, chopped
- 2 teaspoons butter, melted
- 1/2 pound fresh mushrooms, sliced
- 1/4 cup chicken broth
- 1/4 cup dry white wine
- 1/4 teaspoon salt
- 1/4 teaspoon pepper
- 1/4 teaspoon thyme
- 1/4 cup sour cream
- hot cooked noodles
How To Make chicken stroganoff

Step 1Cut the chicken into 1/2 inch strips; set chicken aside.

Step 2Saute the onion in 2 teaspoons butter in a large skillet over medium heat for 2 minutes. Add the chicken, and saute 4 to 5 minutes or until chicken is browned. Remove the chicken from the skillet, reserving the drippings in the skillet. Set the chicken aside.

Step 3Add 1 teaspoon butter to skillet; cook over medium heat until melted. Add the mushrooms and saute for 2 minutes. Stir in broth and the next 4 ingredients. Bring to a boil; reduce heat and simmer uncovered for 10 minutes or until the mushrooms are tender and the liquid is reduced by half. Add the reserved chicken; cook until thoroughly heated. Remove from heat and stir in the sour cream. Serve with noodles if desired.
