Ingredients

  • 1 pound chicken breast-cut into bite size pieces
  • 1/2 large yellow onion-diced
  • 1 small package peapods
  • 1/2 bag carrots and broccoli pre cut veggies
  • 1 pound fresh precut mushrooms
  • quinoa
  • 1 small 4oz can mild green chilies

How To Make chicken skillet veggies with quinoa

  • Step 1
    Secure a Large Deep Skillet. On Med/ High heat, Olive Oil and 3 T butter. Add in Veggie mixture + peapods, onion and mushrooms. Stir to coat. Stir Fry until Veggies are tender and chicken is no longer pink.
  • Step 2
    In a large pot, Follow Quinoa directions on bag. I used chicken Broth instead of water. Attend to your stir fry. Once Quinoa is done, add in undrained green chilies. stir to combined .
