Ingredients
- 1 pound chicken breast-cut into bite size pieces
- 1/2 large yellow onion-diced
- 1 small package peapods
- 1/2 bag carrots and broccoli pre cut veggies
- 1 pound fresh precut mushrooms
- quinoa
- 1 small 4oz can mild green chilies
How To Make chicken skillet veggies with quinoa

Step 1Secure a Large Deep Skillet. On Med/ High heat, Olive Oil and 3 T butter. Add in Veggie mixture + peapods, onion and mushrooms. Stir to coat. Stir Fry until Veggies are tender and chicken is no longer pink.

Step 2In a large pot, Follow Quinoa directions on bag. I used chicken Broth instead of water. Attend to your stir fry. Once Quinoa is done, add in undrained green chilies. stir to combined .
