Chicken Broccoli Casserole

This is a favorite of my older son David. He loved to go to granny's house and have this. And it was one of the recipes he wanted me to find. It took some looking she hid them in many different places in her collection.

2 1/2 c
cooked chicken shredded ( if you like more meat add 3 cups)
2 c
minute rice(cooked in the chicken broth)
3/4 can(s)
can of evaporated milk
1 can(s)
celery soup
1 Tbsp
minced onions
2 pkg
frozen broccoli (thawed)
1 c
shredded cheddar cheese

How to Make Chicken Broccoli Casserole


  • 1Mix chicken,rice,milk,celery soup, onion, salt and pepper to taste, and broccoli. Using large casserole dish or pan make first layer using 1/2 of mixture. Place 1/2 cup grated cheese on top.
  • 2Repeat for second layer, top with grated cheese use more if needed to cover top. Bake at 375 for 20 minutes. Serve hot.
  • 3Now I'll add this for David who hates onions if he can spot it in a food. Leave minced onions out and replace it with onion powder or salt.
