chicken breasts with lemon

This lemon chicken goes great with mashed potatoes and gravy and green beans. And with a piece of apple pie.

Ingredients

  • 1/2 cup all purpose flour
  • - salt and freshly ground pepper to taste
  • 4 - chicken breasts halved, skinless & boneless
  • 2 tablespoons olive oil, light
  • 4 - sprigs fresh thyme
  • 2 tablespoons shallots finely chopped
  • 2 teaspoons cloves finely chopped
  • 2 teaspoons lemon rind, grated
  • 3 tablespoons lemon juice, fresh
  • 1/2 cup chicken broth
  • 2 tablespoons butter, unsalted

How To Make chicken breasts with lemon

  • Step 1
    Season flour with salt and pepper, and dredge the chicken all over.
  • Step 2
    Shake off excess flour.
  • Step 3
    Heat the oil in a heavy skillet large enough to hold the chicken piecesin one layer. Or use two skilltes.
  • Step 4
    Add chicken and cook uncovered, over medium heat for 5 minutes or until light browned.
  • Step 5
    Turn the chicken and cook for 5 minutes, or until cooked through.
  • Step 6
    Carefully remove the oil from the skillet, leave the chicken. Discard oil
  • Step 7
    Add the thyme, shallots, and garlic cook for about 1 minute. Don' burn garlic
  • Step 8
    Add the lemon rind, the lemon juice and broth. Scrap the skillet to dissolve the brown particles that cling to bottom
  • Step 9
    Add the butter, and cook for three more minutes.
