Ingredients

    all purpose flour
  • ·
    salt and freshly ground pepper to taste
  • 4
    chicken breasts halved, skinless & boneless
  • 2 Tbsp
    olive oil, light
  • 4
    sprigs fresh thyme
  • 2 Tbsp
    shallots finely chopped
  • 2 tsp
    cloves finely chopped
  • 2 tsp
    lemon rind, grated
  • 3 Tbsp
    lemon juice, fresh
  • 1/2 c
    chicken broth
  • 2 Tbsp
    butter, unsalted

How to Make CHICKEN BREASTS with LEMON

Step-by-Step

  1. Season flour with salt and pepper, and dredge the chicken all over.
  2. Shake off excess flour.
  3. Heat the oil in a heavy skillet large enough to hold the chicken piecesin one layer. Or use two skilltes.
  4. Add chicken and cook uncovered, over medium heat for 5 minutes or until light browned.
  5. Turn the chicken and cook for 5 minutes, or until cooked through.
  6. Carefully remove the oil from the skillet, leave the chicken. Discard oil
  7. Add the thyme, shallots, and garlic cook for about 1 minute. Don' burn garlic
  8. Add the lemon rind, the lemon juice and broth. Scrap the skillet to dissolve the brown particles that cling to bottom
  9. Add the butter, and cook for three more minutes.
