This lemon chicken goes great with mashed potatoes and gravy and green beans. And with a piece of apple pie.

Ingredients

1/2 c
all purpose flour
salt and freshly ground pepper to taste
4
chicken breasts halved, skinless & boneless
2 Tbsp
olive oil, light
4
sprigs fresh thyme
2 Tbsp
shallots finely chopped
2 tsp
cloves finely chopped
2 tsp
lemon rind, grated
3 Tbsp
lemon juice, fresh
1/2 c
chicken broth
2 Tbsp
butter, unsalted

How to Make CHICKEN BREASTS with LEMON

Step-by-Step

  • 1Season flour with salt and pepper, and dredge the chicken all over.
  • 2Shake off excess flour.
  • 3Heat the oil in a heavy skillet large enough to hold the chicken piecesin one layer. Or use two skilltes.
  • 4Add chicken and cook uncovered, over medium heat for 5 minutes or until light browned.
  • 5Turn the chicken and cook for 5 minutes, or until cooked through.
  • 6Carefully remove the oil from the skillet, leave the chicken. Discard oil
  • 7Add the thyme, shallots, and garlic cook for about 1 minute. Don' burn garlic
  • 8Add the lemon rind, the lemon juice and broth. Scrap the skillet to dissolve the brown particles that cling to bottom
  • 9Add the butter, and cook for three more minutes.
