chicken apple meatballs in an apple cream sauce
I have always loved pairing chicken and apples together so I figured I'd throw together some kind of meatball recipe and see if it comes out good. And did it ever! My 4 year old gobbled his up so fast! There's a perfect balance of spices to make both the chicken and the apples the star of this dish! If you want a stronger apple flavor, replace all or some of the water in the sauce with apple juice or cider. My kitchen smells amazing and my belly and taste buds are highly satisfied. And the best part? 1 serving (3 meatballs) is only 3 points with Weight Watchers! Healthy AND Delicious!

Ingredients
- 2 - apples (i used red delicious)
- 1 pound ground chicken 98% fat free
- 1 - large egg
- 1/4 cup flour
- 2 tablespoons dried chopped onion
- 2 tablespoons dried parsley
- 1/2 - 1 teaspoons ground cinnamon
- 1/2 - 1 teaspoons seasoning salt
- 1/8 - 1/4 teaspoon nutmeg
- 1/8 - 1/4 teaspoon cumin
- - fresh cracked pepper
- 1 can hyvee healthy recipe condensed cream of chicken soup
- 1/4 cup fage total 0% plain greek yogurt
- 1/4 cup applesauce, unsweetened
- 1/8 teaspoon ground cinnamon (for sauce)
- 1/8 teaspoon seasoning salt (for sauce)
- 1/2 can water (use soup can)
- 1/3 cup whole wheat breadcrumbs
How To Make chicken apple meatballs in an apple cream sauce

Step 1Preheat oven to 425. Peel and dice the apples. Dice one small for the meat mixture and one medium for the sauce.

Step 2In a medium bowl mix together the ground chicken, small apples, egg, onion, and all the spices.

Step 3Slowly add in the flour. I did mine in 3 parts to be sure it all got incorporated. Set aside.

Step 4In a small bowl whisk together the can of soup, yogurt, applesauce, 1/2 soup can of water, cinnamon, and seasoning salt.

Step 5Fold in the remaining diced apples.

Step 6Using an 9x9 pan, pour enough of the sauce mixture to cover the bottom of the pan.

Step 7Roll the meat mixture into 12 balls and roll them in the breadcrumbs. Place them in the pan (it's a tight fit!)

Step 8Bake uncovered for 10 minutes. This helps the meatballs get a crisp outer layer and not be soggy.

Step 9Lower oven temp to 400. Pour remaining sauce on top of meatballs and spread evenly.

Step 10Bake uncovered at 400 for about 15 minutes or until a meat thermometer inserted in the center of a meatball reads 165.
