It was time for me to clean out my cupboard. I happen to notice a can of spinach and a jar of hearts of palm. I wanted to experiment with these ingredients to see if it went well in a savory cheesecake. The end result was creamy and flavorful.

Ingredients

  • 24 oz
    cream cheese
  • 3 large
    eggs
  • 1 Tbsp
    all purpose flour
  • 1 pkg
    ritz crackers
  • 2 Tbsp
    butter, melted
  • 1 tsp
    salt
  • 1 tsp
    black pepper
  • 1 tsp
    chili powder
  • 1/4 tsp
    thyme, leaves
  • 2 c
    chicken breast cooked
  • 1 c
    hearts of palm
  • 1 c
    chopped spinach drained
  • 1 tsp
    garlic powder
  • 1 tsp
    onion powder
  • 1 c
    ricotta cheese

How to Make Hearts of Palm & Spinach Cheesecake

Step-by-Step

  1. Pre-heat oven at 350 degrees. In a food processor, add ritz crackers and 2 tablespoons of melted butter. Pulse until coarse, pour crumbs and press into the bottom of a nonstick 9 inch springform pan. Set aside
  2. Add cream cheese and eggs in a large bowl, beat in by using a mixer until creamy. Combine flour, curry powder, salt, chili powder, thyme, garlic powder, pepper, and onion powder mix together using a spatula.
  3. Fold in gently chicken, hearts of palm, spinach, and ricotta cheese. Pour mixture into a springform pan and place on a baking sheet. Bake for 40 minutes. Run knife around rim of pan to loosen the cake. Cool before removing rim of pan.
  4. Let cool for several hours or overnight.
