hearts of palm & spinach cheesecake

It was time for me to clean out my cupboard. I happen to notice a can of spinach and a jar of hearts of palm. I wanted to experiment with these ingredients to see if it went well in a savory cheesecake. The end result was creamy and flavorful.

Ingredients

  • 24 ounces cream cheese
  • 3 large eggs
  • 1 tablespoon all purpose flour
  • 1 package ritz crackers
  • 2 tablespoons butter, melted
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon chili powder
  • 1/4 teaspoon thyme, leaves
  • 2 cups chicken breast cooked
  • 1 cup hearts of palm
  • 1 cup chopped spinach drained
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 cup ricotta cheese

How To Make hearts of palm & spinach cheesecake

  • Step 1
    Pre-heat oven at 350 degrees. In a food processor, add ritz crackers and 2 tablespoons of melted butter. Pulse until coarse, pour crumbs and press into the bottom of a nonstick 9 inch springform pan. Set aside
  • Step 2
    Add cream cheese and eggs in a large bowl, beat in by using a mixer until creamy. Combine flour, curry powder, salt, chili powder, thyme, garlic powder, pepper, and onion powder mix together using a spatula.
  • Step 3
    Fold in gently chicken, hearts of palm, spinach, and ricotta cheese. Pour mixture into a springform pan and place on a baking sheet. Bake for 40 minutes. Run knife around rim of pan to loosen the cake. Cool before removing rim of pan.
  • Step 4
    Let cool for several hours or overnight.
