This recipe has been published by me in my second cookbook and is a wonderful brunch meal the avocado and sour cream is great as a topping for this tasty meal...hope you try it..Recipe from Kitchen Chatter and Friends Cook book 2.

Ingredients

  • 3/4 cup cooked diced chicken
  • 3 tablespoons sliced almonds
  • 1 1/2 cups shredded swiss cheese
  • 3 large eggs
  • 1 1/2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon mace
  • 1/8 teaspoon pepper
  • 2 tablespoons grated parmesan cheese
  • 3/4 cup bisquick baking mix
  • 1 - avocado, scooped out and mashed with the sour cream
  • 1 cup dairy sour cream

How To Make chicken-almond quiche

  • Step 1
    Combine chicken and almonds and spread in the bottom of a buttered 10-inch pie plate; add swiss cheese,on top. In a blender on high, beat together Bisquick, eggs, salt, mace, and pepper for 15 seconds-until smooth. Pour carefully into pie plate. SprinkleParmesann on top. Bake in 400^ for 30 minutes, until knife inserted in center comes out clean. Serve with a dollop of avocado and sour cream blended together.
