Ingredients
- 2 tablespoons canola oil
- 2 1/2 tablespoons jamaican jerk seasoning
- 4 to 5 pounds whole chicken, rinsed, pat dry and trussed
- 1/2 cup caribbean bbq sauce
How To Make caribbean jerk rotisserie chicken

Step 1Place an aluminum drip pan in the center of the grill, Position the rotisserie fork slightly off center on the BBQ.

Step 2Preheat BBQ to 375ºF to 400ºF, turning on the outside burners.

Step 3In a small bowl, add canola oil and Jamaican Jerk Seasoning; whisk to combine and set aside.

Step 4Insert the spit rod through the bird’s cavity. Sit the chicken over a large stainless steel bowl before sliding the other fork on the spit rod then insert firmly so the chicken stays in place when turning.

Step 5Brush on the rub, covering the entire bird.

Step 6Transfer the chicken to the BBQ, start the rotisserie motor, close the lid and roast on indirect heat for 1:15 to 1:30 hours or until the internal temperature reads 175ºF.

Step 7After 30 minutes of roasting, brush on Caribbean BBQ Sauce and repeat every 15 minutes or until the chicken is done.
