best tasting sweet and sour chicken bites
Recipe adapted from Company's Coming- Chinese Cooking and tweaked a little. This is the best ever chicken.

Ingredients
- CHICKEN BITES:
- 1 cup all purpose flour
- 3 tablespoons cornstarch
- 3/4 teaspoon seasoned salt (lawry's)
- 3 large eggs
- 4 to 5 teaspoons water
- 3 large chicken breasts, boneless and skinless
- for frying - canola oil
- SWEET AND SOUR SAUCE:
- 1/2 large onion, chopped
- 14 ounces can pineapple tidbits, do not drain
- 1/2 cup brown sugar, firmly packed
- 3 tablespoons apple cider vinegar
- 1/2 teaspoon salt
- 1/2 cup water
- 2 tablespoons cornstarch
- 1/2 medium green pepper, chopped
How To Make best tasting sweet and sour chicken bites

Step 1Chicken Bites: In a Dutch oven or deep-fryer heat the oil to 375^. Combine flour,cornstarch and salt in a large bowl. Crack eggs into a small bowl and add the water and whisk until blended. Combine flour to the egg mixture blending until smooth. Add chicken. Stir to coat well.

Step 2With a fork, drop chicken one piece at a time into hot oil. Cook in batches, making sure to not over- crowd the pan. Cook until golden brown about 5 minutes. Remove and drain on paper toweling.

Step 3Sauce: In a saucepan, fry the onion in a Tablespoon of oil, until they start to soften.Add the pineapple and juice, brown sugar, vinegar and salt. Bring to a boil.

Step 4In a measuring cup combine the cornstarch and water , stir until dissolved. Add to pineapple mixture and add the green pepper. Simmer 2 minutes until thick. Pour over chicken to serve over rice or pasta.

Step 5NOTE: Both the chicken and the sauce can be frozen separately. Once the chicken is completely cooled and drained, place in a ziploc freezer bag;you can even divide into individual serving size bags. To cook from frozen. Place on baking sheet frozen and bake at 400^ for 15-20 minutes, until crisp and heated through..or in the microwave for about 5 minutes.Then crisp in oven. --- Sauce: Allow to cool. Divide into freezer bag or bags. Thaw and heat in microwave.
