Recipe adapted from Company's Coming- Chinese Cooking and tweaked a little.
This is the best ever chicken.

Ingredients

  • CHICKEN BITES:

  • 1 c
    all purpose flour
  • 3 Tbsp
    cornstarch
  • 3/4 tsp
    seasoned salt (lawry's)
  • 3 large
    eggs
  • 4 to 5 tsp
    water
  • 3 large
    chicken breasts, boneless and skinless
  • for frying
    canola oil
  • SWEET AND SOUR SAUCE:

  • 1/2 large
    onion, chopped
  • 14 oz
    can pineapple tidbits, do not drain
  • 1/2 c
    brown sugar, firmly packed
  • 3 Tbsp
    apple cider vinegar
  • 1/2 tsp
    salt
  • 1/2 c
    water
  • 2 Tbsp
    cornstarch
  • 1/2 medium
    green pepper, chopped

How to Make Best Tasting Sweet and Sour Chicken Bites

Step-by-Step

  1. Chicken Bites:
    In a Dutch oven or deep-fryer heat the oil to 375^.
    Combine flour,cornstarch and salt in a large bowl. Crack eggs into a small bowl and add the water and whisk until blended. Combine flour to the egg mixture blending until smooth. Add chicken. Stir to coat well.
  2. With a fork, drop chicken one piece at a time into hot oil. Cook in batches, making sure to not over- crowd the pan. Cook until golden brown about 5 minutes. Remove and drain on paper toweling.
  3. Sauce:
    In a saucepan, fry the onion in a Tablespoon of oil, until they start to soften.Add the pineapple and juice, brown sugar, vinegar and salt. Bring to a boil.
  4. In a measuring cup combine the cornstarch and water , stir until dissolved. Add to pineapple mixture and add the green pepper. Simmer 2 minutes until thick. Pour over chicken to serve over rice or pasta.
  5. NOTE:
    Both the chicken and the sauce can be frozen separately.
    Once the chicken is completely cooled and drained, place in a ziploc freezer bag;you can even divide into individual serving size bags.
    To cook from frozen. Place on baking sheet frozen and bake at 400^ for 15-20 minutes, until crisp and heated through..or in the microwave for about 5 minutes.Then crisp in oven.

    Sauce:
    Allow to cool. Divide into freezer bag or bags. Thaw and heat in microwave.
