Best Tasting Sweet and Sour Chicken Bites
This is the best ever chicken.
1 call purpose flour
3/4 tspseasoned salt (lawry's)
4 to 5 tspwater
3 largechicken breasts, boneless and skinless
for fryingcanola oil
SWEET AND SOUR SAUCE:
1/2 largeonion, chopped
14 ozcan pineapple tidbits, do not drain
1/2 cbrown sugar, firmly packed
3 Tbspapple cider vinegar
1/2 mediumgreen pepper, chopped
How to Make Best Tasting Sweet and Sour Chicken Bites
- Chicken Bites:
In a Dutch oven or deep-fryer heat the oil to 375^.
Combine flour,cornstarch and salt in a large bowl. Crack eggs into a small bowl and add the water and whisk until blended. Combine flour to the egg mixture blending until smooth. Add chicken. Stir to coat well.
- With a fork, drop chicken one piece at a time into hot oil. Cook in batches, making sure to not over- crowd the pan. Cook until golden brown about 5 minutes. Remove and drain on paper toweling.
In a saucepan, fry the onion in a Tablespoon of oil, until they start to soften.Add the pineapple and juice, brown sugar, vinegar and salt. Bring to a boil.
- In a measuring cup combine the cornstarch and water , stir until dissolved. Add to pineapple mixture and add the green pepper. Simmer 2 minutes until thick. Pour over chicken to serve over rice or pasta.
Both the chicken and the sauce can be frozen separately.
Once the chicken is completely cooled and drained, place in a ziploc freezer bag;you can even divide into individual serving size bags.
To cook from frozen. Place on baking sheet frozen and bake at 400^ for 15-20 minutes, until crisp and heated through..or in the microwave for about 5 minutes.Then crisp in oven.
Allow to cool. Divide into freezer bag or bags. Thaw and heat in microwave.
