Ingredients
- 1/2 cup olive oil
- 2 large red pepper
- 1/3 cup lemon juice
- 2 large green peppers
- 2 tablespoons chopped italian parsley
- 3/4 teaspoon salt
- 1 tablespoon dried oregano
- 1/8 teaspoon pepper
- 3 1/2 pounds broiler/fryer chicken
- - lemon slices
How To Make baked lemon chicken with pepper

Step 1Combine all ingredients except chicken and vegetables.

Step 2Add chicken and marinate at room temperature for 1 hour, turning once.

Step 3Drain and bake chicken at 400 degrees for 35 minutes.

Step 4Cut peppers into 1/2-inch thick rings.

Step 5Saute 8 minutes.

Step 6Spoon peppers around chicken.

Step 7Makes 4 to 6 servings.

Step 8Any leftovers can be made into chicken soup.
