awesome baked chicken scampi
I’ve been playing around with this for a bit of time, and finally came up with this recipe. I’ve seen chicken scampi recipes that use a cream-based sauce, and/or combine the chicken with veggies (like carrots, etc), and although I’m sure that it’s quite tasty… it’s not scampi. Scampi is an oil, wine, lemon-based sauce. I like to think of mine as a combination of the best elements of scampi and piccata. So, you ready… Let’s get into the kitchen.

Ingredients
- PLAN/PURCHASE
- 1/2 pound chicken breast, boneless, skinless, cut into bite-sized pieces
- THE MARINADE
- 3 tablespoons olive oil, extra virgin
- 3 tablespoons wine, dry white (pinot grigio, sauvignon blanc, chardonnay)
- 1 tablespoon lemon juice, freshly squeezed
- 1 pinch salt, kosher variety
- 1 pinch black pepper, freshly ground
- THE SAUCE
- 2 tablespoons yellow onion, finely diced
- 1 clove garlic, minced
- 5 tablespoons sweet butter, unsalted
- 2 tablespoons olive oil, extra virgin
- 1 pinch crushed red pepper flakes
- 2 tablespoons wine, dry white
- 2 tablespoons lemon juice, freshly squeezed
- 1/8 teaspoon salt, kosher variety
- 1/8 teaspoon black pepper, freshly ground
- 1/4 cup panko breadcrumbs
How To Make awesome baked chicken scampi

Step 1PREP/PREPARE

Step 2THE MARINADE

Step 3Gather and prep all your ingredients.

Step 4Add all of the marinade ingredients to a bowl or Ziploc bag, and mix thoroughly.

Step 5Add the chicken and then mix to coat.

Step 6Place the chicken into the refrigerator, and allow it to marinate for two hours, but no longer than six.

Step 7THE SAUCE

Step 8Gather and prep all your ingredients.

Step 9Add all of the sauce ingredients, except the panko breadcrumbs to a small saucepan, over medium heat.

Step 10Allow to simmer for 5 minutes.

Step 11Take off the heat and stir in the panko breadcrumbs.

Step 12Place a rack in the middle position, and preheat the oven to 400f (205c).

Step 13Remove the chicken from the marinade, and divide between two ovenproof dishes.

Step 14Divide the sauce between the two dishes

Step 15Place in the preheated oven, and bake for 30 minutes, or until the sauce is bubbling and the chicken begins to brown.

Step 17Sprinkle a bit of Parmesan over the top, and serve with some fresh pasta. Enjoy.
