I’ve been playing around with this for a bit of time, and finally came up with this recipe. I’ve seen chicken scampi recipes that use a cream-based sauce, and/or combine the chicken with veggies (like carrots, etc), and although I’m sure that it’s quite tasty… it’s not scampi. Scampi is an oil, wine, lemon-based sauce. I like to think of mine as a combination of the best elements of scampi and piccata. So, you ready… Let’s get into the kitchen.

Ingredients

  • PLAN/PURCHASE
  • 1/2 pound chicken breast, boneless, skinless, cut into bite-sized pieces
  • THE MARINADE
  • 3 tablespoons olive oil, extra virgin
  • 3 tablespoons wine, dry white (pinot grigio, sauvignon blanc, chardonnay)
  • 1 tablespoon lemon juice, freshly squeezed
  • 1 pinch salt, kosher variety
  • 1 pinch black pepper, freshly ground
  • THE SAUCE
  • 2 tablespoons yellow onion, finely diced
  • 1 clove garlic, minced
  • 5 tablespoons sweet butter, unsalted
  • 2 tablespoons olive oil, extra virgin
  • 1 pinch crushed red pepper flakes
  • 2 tablespoons wine, dry white
  • 2 tablespoons lemon juice, freshly squeezed
  • 1/8 teaspoon salt, kosher variety
  • 1/8 teaspoon black pepper, freshly ground
  • 1/4 cup panko breadcrumbs

How To Make awesome baked chicken scampi

  • Step 1
    PREP/PREPARE
  • Step 2
    THE MARINADE
  • Step 3
    Gather and prep all your ingredients.
  • Step 4
    Add all of the marinade ingredients to a bowl or Ziploc bag, and mix thoroughly.
  • Step 5
    Add the chicken and then mix to coat.
  • Step 6
    Place the chicken into the refrigerator, and allow it to marinate for two hours, but no longer than six.
  • Step 7
    THE SAUCE
  • Step 8
    Gather and prep all your ingredients.
  • Step 9
    Add all of the sauce ingredients, except the panko breadcrumbs to a small saucepan, over medium heat.
  • Step 10
    Allow to simmer for 5 minutes.
  • Step 11
    Take off the heat and stir in the panko breadcrumbs.
  • Step 12
    Place a rack in the middle position, and preheat the oven to 400f (205c).
  • Step 13
    Remove the chicken from the marinade, and divide between two ovenproof dishes.
  • Step 14
    Divide the sauce between the two dishes
  • Step 15
    Place in the preheated oven, and bake for 30 minutes, or until the sauce is bubbling and the chicken begins to brown.

    PLATE/PRESENT

    Sprinkle a bit of Parmesan over the top, and serve with some fresh pasta. Enjoy.
