Garden fresh parsley, scallions , tarragon, cucumber and lettuce highlite this wonderful warm weather salad!

Ingredients

  • 5 small anchovy fillets
  • 1 clove garlic
  • 1/3 cup fresh parsley,chopped
  • 1/3 cup scallions,chopped
  • 3 tablespoons fresh tarragon,chopped
  • 3/4 cup mayonnaise
  • 3/4 cup sour cream
  • 1/4 cup fresh lemon juice
  • 1 small ripe avocado,divided
  • 1/2 teaspoon cracked black pepper
  • 1/2 teaspoon salt
  • SALAD
  • 1 small rotesserie chicken
  • 1 large english cucumber
  • 2 small ripe avocados
  • 1 large boston bibb lettuce
  • 4 large strawberries, fresh

How To Make avocado green goddess spring chicken salad

  • Step 1
    In a food processor or blender combine all dressing ingredients except avocado, black pepper and salt. Peel and chop half of the avocado and add to the mix. Reserve other half. Puree to blend. Season with cracked black pepper and salt to taste . Chill at least 1 hour.
  • Step 2
    When ready to serve prepare the rest of the salad. Slice ½ inch pieces off chicken and chop into 1 inch pieces and place in a medium sized bowl. Add to this the cucumber which has been quartered and sliced into ½ inch chunks . Peel the 2 avocados and chunk into ½ inch pieces. Add about half of the dressing and fold gently with a spatula. Add more dressing to desired consistency and fold.
  • Step 3
    Place the individual lettuce leaves on serving platter or individual plates and add a scoop of chicken salad to each. Slice the reserved avocado half and slice into 8 pieces. Garnish with sliced avocado and also fresh berries if desired. Serves 4 as a main dish.
