Ingredients
- 1 pound boneless, skinless chicken thighs, cut into 1"-pieces
- 1 - 8 oz bag shredded carrot
- 1 tablespoon lite soy sauce
- 1/2 teaspoon ground ginger
- 1 tablespoon rice wine vinegar
- 1 cup water
- 1/4 teaspoon pepper
- 3 - 14 oz cans reduced-sodium chicken broth
- 2 ounces dry vermicelli pasta
- 1 - 6 oz bag frozen pea pods, thawed, halved diagonally.

Step 1In a 6-quart slow-cooker, combine chicken, carrots, 1 tbsp soy sauce, vinegar, ginger and pepper. Stir in broth & water. Cover and cook on high for 3 hrs. Stir in vermicelli pasta and pea pods. Cover, cook another 12-15 min, or until pasta is cooked through. Serve w/ additional soy sauce.
