Ingredients For air fryer essentials: spicy chicken breasts

  • THE BRINE
  • 1 c
    dill pickle juice, more on this later
  • THE CHICKEN
  • 2 md
    chicken breasts, boneless, skinless
  • 2 tsp
    olive oil, extra virgin variety
  • THE SPICES
  • salt, kosher variety
  • black or white pepper, freshly ground
  • smoked paprika
  • cayenne pepper
  • other spices, your choice

    The brine used in this recipe is the liquid from a jar of dill pickles. However, in these troubling times, going out for some pickles just to use the brine is unacceptable. So, here are some options. 1. Brine the chicken breast in some saltwater. 2. Add some salt and dried dill to a cup or so of water, boil, and then let come to room temperature. In either case place the brining solution in the fridge until nice and cold before adding the chicken breasts.

    Gather your ingredients (mise en place).

    Brine the chicken breasts for 2 – 3 hours.
  • 5
    Rub the chicken breasts with a bit of olive oil, and then sprinkle some spices on one side. I am using salt, pepper, paprika, and cayenne.

    Add to the air fryer basket, spice side down, and then sprinkle the other side with more spices.

    Set the air fryer to 350f (175c) and cook for 10 minutes.

    Open the fryer and flip the chicken breasts.

    Cook until an instant-read thermometer reads around 160f (70c), about 4 – 6 minutes.

    Allow to rest for 3 – 4 minutes before serving.
