tamale pot pies with turkey and pepper jack
This is from a Weight Watchers recipe, but I bumped up the spice and heat level in here if low fat cheese is used there are 6 points per serving.

Ingredients
- 1 1/4 pounds ground turkey or chicken
- 1 large onion, chopped
- 10 ounces can diced tomatoes with green chilis
- 8 ounces can tomato sauce
- 1 cup fresh or frozen corn kernels
- 1 tablespoon ground cumin
- 3/4 cup yellow cornmeal
- 1/4 teaspoon salt
- 1 clove garlic, more if you like
- 1/2 teaspoon oregano
- 1 teaspoon chili powder
- 3 cups water
- 3 ounces shredded fat free pepper jack cheese

Step 1Preheat oven to 400 degrees. Spray 6- 8 ounce ramekins with non stick spray.

Step 2Spray large non stick skillet with nonstick spray and set over high heat. Add turkey and onion and stir until turkey is no longer pink. Stir in tomatoes, tomato sauce and all the rest of the spices. Simmer 15 minutes to marry flavors.

Step 3Whisk together cornmeal salt and 3/4 cup water in a med bowl. Bring remaining 2 1/4 cups water to a boil in a medium saucepan over high heat. Slowly whisk cornmeal mix into boiling water. Reduce heat and simmer, stirring frequently until thickened, 4-5 minutes.Remove from heat and stir in 1/2 cup jack cheese.

Step 4Remove from heat, divide between ramekins. Spoon cornmeal over tops and bake for 8 minutes. Sprinkle remaining cheese and continue baking until bubbly and cheese melts.
