sweet and sour supper

This recipe was a favorite for my son when he was about 5 years old. Today I have adapted the recipe for our tastes. I hope you try this for your family. So simple and easy. The origional recipe had only green pepper and mushrooms that were layered in...not precooked. Make it the way you want!

Ingredients For sweet and sour supper

  • 1 lb
    ground beef
  • 3/4 tsp
    garlic
  • 1 1/2 tsp
    chili powder
  • 1 1/2 tsp
    salt
  • 1 1/2 tsp
    oregano
  • pepper
  • 3 c
    cooked rice--i used parboiled
  • butter and olive oil
  • 6-8 oz
    fresh mushrooms
  • 1 lg
    green pepper, sliced or diced
  • 1/2
    red pepper, diced
  • 1 stalk
    celery, diced
  • 1/2 lg
    onion, chopped
  • FOR THE SAUCE
  • 1 c
    sugar
  • 2 Tbsp
    sugar
  • 1/3 c
    cornstarch
  • 2 1/2 c
    cold water
  • 1/3 c
    vinegar
  • 1/3 c
    ketchup
  • 1 1/2 tsp
    salt
  • pepper to taste
  • sriracha, as much as you want
  • GARNISH OPTIONAL OF COURSE!
  • tomato, chopped
  • fresh parsley or cilantro

How To Make sweet and sour supper

    I make my rice in the instant pot. 3C rice to 3C water. Rinse the rice well before cooking in the IP on high pressure for 3 minutes with a 10 minute release. Fluff with a fork.

    Cook beef until only a bit of pink remains.

    Stir in the spices and cook until they are fragrant (about 1 minute) Remove meat from skillet and reserve.

    In the same skillet melt some olive oil with some butter. Add onions and cook until limp.

    Add peppers and continue to cook.

    Add mushrooms and cook until they release their moisture.

    In a greased 3 qt corning ware; layer rice, hamburger and veggies.

    Now for the sauce! Combine sugar and cornstarch in a pot and stir until mixed.

    Stir in the rest of the sauce ingredients until mixed and smooth . Bring to a boil.

    Cook and stir until thick and shiny. Then cook one more minute stirring all the while.

    Pour sauce over ingredients in casserole dish. You will probably have to shift the ingredients around to let the sauce seep in.

    Bake uncovered for 30 minutes at 350. Garnish with tomatoes and cilantro or parsley before serving.
