(1 RATING)

Ingredients
- 3/4 cup brown lentils
- 1 cup macaroni, elbow
- 1 - onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon cumin
- 1/8 - 1/4 teaspoon cayenne
- 1 - bay leaf
- - salt and pepper to taste
- 3 cloves garlic, minced
- 3/4 cup brown rice
- 1/2 cup tomato paste
- 1 tablespoon cider vinegar
- 3 cups vegetable broth
How To Make lizzy's koushari
-
Step 1Rinse lentils. Soak, covered in hot water for at least 30 minutes.
-
Step 2Heat olive oil in bottom of large pot. Saute the onion in the olive oil until it begins to brown. Stir in the seasonings and garlic and continue cooking until fragrant. Add the brown rice, and saute until it begins to brown. Drain soaked lentils and add to rice mixture. Stir in the tomato paste, vinegar, and broth. Bring to a boil. Lower heat to simmer, cover tightly, and cook until the rice and lentils are tender, about an hour.
-
Step 3Cook macaroni in salted, boiling water until tender. Drain and top with lentil and rice mixture. Serve and enjoy!
