leftover fish (or turkey) casserole
Whenever we had leftover fish no one wanted to eat it even though they liked it the first day. So I came up with this casserole which made them not only eat the leftover fish but like it! A lot! It could also be used with leftover chicken or turkey.

Ingredients
- 1 1/2 cups leftover fish
- 1/4 cup olive oil, extra virgin
- 1/3 cup flour
- 1 - chicken bouillon cube
- 1 cup water
- 4 cups milk
- 1 package mixed vegetables, frozen
- 1/3 cup parmesan cheese
- 1/2 cup cheddar cheese, shredded
- - salt and pepper to taste
How To Make leftover fish (or turkey) casserole

Step 1Cut the fish into bite size pieces and set aside. In a pot over medium heat add the olive oil and flour and stir for a minute. Add the bouillon cube and gradually add the water while stirring till it is fully incorporated. Gradually add the milk and stir well. Bring to a slow boil then add the vegetables and fish and stir.

Step 2Add the cheeses, salt and pepper and stir well to make sure they are well distributed.

Step 3Pour into a casserole and bake at 375 till the top is golden brown, about 30 - 40 minutes.
