economy egg casserole
This very old recipe is high in protein and iron. It is delicious ("Everything is better with cheese"). It is very good for lunch or a light supper. Definitely worth a try.

Ingredients
- 1/4 cup chopped onion
- 2 tablespoons butter
- 6 tablespoons all-purpose flour
- 2/3 cup skim milk powder
- dash pepper
- 1/2 teaspoon dry mustard
- 2 cups water
- dash hot sauce
- 1 cup grated cheddar cheese
- 8 - eggs, hard cooked, sliced
- 1/2 cup fine bread crumbs
- 2 tablespoons melted butter
How To Make economy egg casserole

Step 1Saute onion in butter until transparent. Blend in flour, skim milk powder and seasonings.

Step 2Gradually add water and hot sauce. Stir and cook until smooth and thick. Add cheese and stir until melted.

Step 3Spread one-third of the sauce in a greased 9 X 5 inch loaf pan. Cover with half the egg slices. Repeat layers, ending with sauce.

Step 4Mix crumbs and melted butter and sprinkle over the top. Bake at 350 F until bubbly, about 20 minutes.
