This very old recipe is high in protein and iron. It is delicious ("Everything is better with cheese"). It is very good for lunch or a light supper. Definitely worth a try.

1/4 c
chopped onion
2 Tbsp
6 Tbsp
all-purpose flour
2/3 c
skim milk powder
1/2 tsp
dry mustard
2 c
hot sauce
1 c
grated cheddar cheese
eggs, hard cooked, sliced
1/2 c
fine bread crumbs
2 Tbsp
melted butter

How to Make Economy Egg Casserole


  • 1Saute onion in butter until transparent. Blend in flour, skim milk powder and seasonings.
  • 2Gradually add water and hot sauce. Stir and cook until smooth and thick. Add cheese and stir until melted.
  • 3Spread one-third of the sauce in a greased 9 X 5 inch loaf pan. Cover with half the egg slices. Repeat layers, ending with sauce.
  • 4Mix crumbs and melted butter and sprinkle over the top. Bake at 350 F until bubbly, about 20 minutes.
