tasty ground beef stew from the pantry

I just arrived home after a short vacation and didn't feel like going shopping for food. So I checked out my freezer for ideas. Result- I defrosted a pound of ground beef, discovered a beef bone (I gather leftover roast bones in the freezer to make stock), and kidney beans that I had prepared and frozen. I chopped up some vegetables and a few other ingredients from the fridge and the pantry. I had brought a tiny bottle of red wine on my vacation. It all worked together - easy and delicious.

Ingredients For tasty ground beef stew from the pantry

  • 1 lb
    lean ground beef
  • 1/2 lg
    onion, small dice
  • 1 stalk
    celery, small dice
  • 1/2 c
    red pepper, small dice
  • 1
    carrot, small dice
  • 2 clove
    garlic
  • 1 Tbsp
    oil (your choice)
  • 8 md
    black olives, halved
  • 1 can
    48 oz. diced tomatoes
  • 1 Tbsp
    (heaping tbsp) better than bouillon or other broth mix
  • 2 c
    water
  • 1
    beef bone (optional)
  • 1 Tbsp
    chipotle paste
  • 2 tsp
    italian herb mix
  • 1 tsp
    chili powder
  • 2 Tbsp
    kosher salt
  • few grinds of pepper
  • 1/4 c
    red rice (or brown or white)
  • 3/4 c
    red wine
  • 1 c
    kidney beans, canned or home prepared from dry
  • 1/2 c
    frozen green beans or peas (for colour)

How To Make tasty ground beef stew from the pantry

    Heat the oil in a large heavy pot. Add the onions, celery, carrots, and red peppers and saute for a couple of minutes. Add the garlic and the ground beef and stir to break up the beef and brown it.

    Add the rest of the ingredients except the beans and simmer for an hour, then add the kidney beans. Simmer for another 5 minutes and add the green beans or peas.

    Simmer another 5 minutes. Taste for seasoning and serve. Freeze leftovers - if any.

    Serving ideas: Serve over mashed potatoes, rice or a baked potato. Top with a dollop of sour cream and/or shredded cheddar cheese. Have with a side dish of garlic toast or plain toast. Serve with a green side salad for a low carb meal.
