Betty's apricot chicken
2 lbchicken thighs, chopped into quarters
1large onion, chopped
1 can(s)apricot nectar
1 can(s)cream of chicken soup
1sachet french onion soup mix
How to Make Betty's apricot chicken
- In a large heavy based saucepan, heat a little oil and fry the chicken until browned. Add the onion and cook for 2 - 3 minutes or until translucent.
- Add the remaining ingredients (use the water to get all the last little bits from the two cans).
- Turn heat to low and simmer for 20 minutes, stirring at least twice.
