betty's chicken and couscous (burger) patties
A great budget recipe. Minced chicken (you could use pork too) with grated carrot, cilantro (coriander) and couscous. Perfect in a burger or with a salad or veggies. Serve with sauce of your choice, my kids like tomato/ketchup but I like sweet chili. These need at least 30 minutes refrigeration time.

Makes 8 patties
Ingredients
- - 1 cup couscous
- - 1 pound (500g) chicken mince (or pork)
- - 2 carrots grated (about 2 cups worth)
- - 1 egg
- - 1/2 cup cilantro (coriander)
- - 2 teaspoons minced garlic
- - salt and pepper to taste
- - 1/3 cup oil - for frying
How To Make betty's chicken and couscous (burger) patties

Step 1Place the couscous in a bowl and pour 1 cup of boiling water. Give a quick stir and cover with cling wrap. Set aside for 5 minutes. Fluff with a fork and leave to cool.

Step 2Place the cooled couscous and the remaining ingredients in a large bowl. Use your hands to mix well. Shape into 8 even patties with wet hands. Chill for at least 30 minutes.

Step 3To cook the patties: heat oil (medium/high heat) in a large frying pan (I use my electric fry pan) . Cook for about 4 minutes on each side.
