Betty's Chicken and Couscous (Burger) Patties

·1 cup couscous
·1 pound (500g) chicken mince (or pork)
·2 carrots grated (about 2 cups worth)
·1/2 cup cilantro (coriander)
·2 teaspoons minced garlic
·salt and pepper to taste
·1/3 cup oil - for frying
How to Make Betty's Chicken and Couscous (Burger) Patties
- Place the couscous in a bowl and pour 1 cup of boiling water. Give a quick stir and cover with cling wrap. Set aside for 5 minutes. Fluff with a fork and leave to cool.
- Place the cooled couscous and the remaining ingredients in a large bowl. Use your hands to mix well. Shape into 8 even patties with wet hands. Chill for at least 30 minutes.
- To cook the patties: heat oil (medium/high heat) in a large frying pan (I use my electric fry pan) . Cook for about 4 minutes on each side.
