stuffed sweet peppers
Stuffed peppers are one of my favorite meals, steaming the peppers and precooking the rice saves a lot of cooking time and unpredictable results of the rice and peppers. My wife doesn't eat beef so I often use turkey or chicken for the meat. When I am cooking the meal just for myself or friends I like to mix pork and beef for the meat.

How To Make stuffed sweet peppers
-
Step 1cut off the top and core sweet peppers, steam for 5-6 minutes. Cook rice to just done
-
Step 2brown the meat (can be most any meat or mix of meats) when browned, drain off excess grease. Add onions(I like my onions to be a little crisp and full of flavor) and cook a little longer. pre heat oven to 350'F add salsas, catsup, and rice. and spices; simmer for 10-15 minutes
-
Step 3in a shallow baking pan arrange the sweet peppers standing up with opening up. Spoon in the meat, rice mixture into peppers. place the tops of the peppers on the peppers. cook for 1 hour.
-
Step 4A lot of times I will double the meat, rice, spice mixture and place the extra mixture around the stuffed peppers before cooking. I also have added shredded cheese to the top of the meat mixture below the top
-
Step 5I often use this same meat mixture to stuff some steamed cabbage leaves and cook along with the peppers.
