My husband doesn’t like traditional stuffed peppers. Since he’s Italian and loves Italian food. I decided to create a red stuffed Bell pepper, with Italian seasonings, and chopped tomatoes. They are baked in Marinara sauce and topped with mozzarella cheese. He loves them. I hope you all do too. Enjoy!

Ingredients

  • 7 - red bell peppers
  • 1 cup chopped bell pepper from above. approximately one pepper
  • 1 pound 85-90% ground beef
  • 1 cup sweet chopped onion
  • 1/2 cup chopped baby bella mushrooms
  • 2 teaspoons dried basil
  • 1 teaspoon dried italian seasoning
  • 3 roma tomatoes seeded
  • 1 cup raw jasmine rice
  • salt and pepper to taste
  • 1/4 cup parmesan cheese
  • 24 ounces jar marinara sauce
  • 6 slices mozzarella cheese or 1 cup grated

How To Make stuffed peppers ala pizzaiola

  • Step 1
    Cut the tops off of peppers. Clean seeds out and trim light colored membranes out. Set aside.
  • Step 2
    In a large skillet, cook ground beef until cooked through. Remove the beef to a bowl and cover. Set aside.
  • Step 3
    Add 2-3 Tbsp olive oil to the pan. Add in the onion, peppers, and mushrooms. Cook until browned and softened. Drain off juice.
  • Step 4
    Add in the garlic. Stir for 1 minute. Add in tomatoes. Cook 2-3 minutes.
  • Step 5
    Drain any juices from the pan. Add the beef back to the pan. Toss in basil, Italian seasoning, salt, and pepper to taste.
  • Step 6
    Cook 1 cup of raw rice per package instructions.
  • Step 7
    Add rice to the beef mixture. Stir in Parmesan cheese. Stuff peppers with mixture.
  • Step 8
    In a 9x13-inch baking pan. Add the jar of marinara sauce to the bottom of a baking pan.
  • Step 9
    Place peppers right side up on top of the marinara sauce. Cover the pan with foil.
  • Step 10
    Bake at 375 degrees for about 1 hour or until peppers are soft and tender.
  • Step 11
    Remove foil from pan. Top peppers with some of the sauce from the pan. Top with cheese. Bake until cheese is melted.
  • Step 12
    Remove from oven. Serve with marinara sauce or ketchup.
