steak sandwiches with arugula/walnut pesto

Hubby wanted steak, kids wanted sandwiches w/ mommy's homemade bread... I compromised and gave them both!! I used my homemade potato(machine) bread for this sandwich, delish!!

Ingredients

  • ARUGULA WALNUT PESTO
  • 2 1/2 cups arugula greens
  • 2 tablespoons parsley, fresh
  • 2 tablespoons cilantro, fresh
  • 2 cloves garlic
  • 1/2 cup walnuts
  • 1/4-1/3 cup olive oil
  • 1/4 cup pecorino romano cheese
  • 1 teaspoon salt
  • - pinch of pepper
  • STEAK MARINADE
  • 1 clove garlic
  • 2 tablespoons parsley, fresh
  • 2 tablespoons cilantro, fresh
  • 1 teaspoon salt
  • 1/2 teaspoon red pepper flakes
  • 1 teaspoon greek seasoning
  • 2 tablespoons olive oil
  • 2 tablespoons champagne vinegar
  • INGREDIENTS
  • 4-6 medium round steaks
  • 1 medium yellow heirloom tomato
  • 8-10 slices fontina cheese
  • 1 small loaf of bread cut into slices
  • 3 - italian peppers sliced
  • 1 large onion sliced
  • 1 tablespoon butter
  • 1 tablespoon olive oil
  • - juice of half lemon
  • **NOTE: THE JUICE OF HALF LEMON GOES IN THE MARINADE, I APOLOGIZE, BUT I CAN'T SEEM TO ADD A LINE WITHOUT STARTING OVER**

How To Make steak sandwiches with arugula/walnut pesto

  • Step 1
    Start by making your pesto. In a food processor, add your arugula and all the ingredients called for the pesto. Pulse till smooth. Remove, place in a bowl and keep chilled till ready to use.
  • Step 2
    Place all your steak marinade ingredients in a ziplock bag, add your steaks and massage till marinade is coated on steaks. Chill till ready to grill.
  • Step 3
    In a saute pan, add the butter and oil. Let pan heat and add the onions, peppers, carmelize. Remove, place in a bowl till ready to assemble.
  • Soooo good, the steak is amazing and the arugula pesto... oh man!
    Step 4
    To assemble: On your bread, spread liberally the arugula pesto on both sides, add your tomatoes, your carmelized onions and peppers, then your cheese and top w/ your steak slices. Cover and ENJOY!!
