savory beef over rice
After Hurricane Irma, I was daunted with the task to make a meal for two using a steak for one after we finally got our electricity turned back on after 4 days of being without it. Being that my sister is my new guinea pig, shes pickier than my son, and my son went off on his own, I set out to whipping this quick and easy meal up. It turned out to be a huge hit! Its full of good savory flavor, the beef pieces were tender and its one of those stick to your ribs kind of comfort food meals. I hope you enjoy it too!

Ingredients
- 2 - beef shanks, cube beef & keep bones
- 12 ounces chuck steak, cubed
- 1/2 cup onion, diced
- 2 small red or yellow pepper, diced
- 4-5 - baby bella mushrooms, sliced
- 4 cups organic beef stock
- 1 teaspoon parsley flakes
- 2-3 small bay leaves
- 1 clove garlic, minced
- 2 teaspoons marmite
- 2/8 teaspoon pepper, fresh ground
- 1 cup long grain white rice, uncooked
- 3 teaspoons heaping, corn starch
How To Make savory beef over rice

Step 1cut the meat off the bone and cube it from the beef shanks. Reserve the bone. Also cube up your chuck steak. You can remove excess fat if there is any. Dice your onions and peppers, set aside slice your mushrooms, set aside Mince your garlic, set aside

Step 2in a large saute pan, add your olive oil to coat the pan, heat it to medium heat and add the beef and the reserved bones. You want to braise the beef and the bones until all sides are sealed. You do not have to brown it. Yes, you will keep the bones in this as they give the meal a whole lot of extra flavor!

Step 3Once the meat is fully braised, add your onion, peppers, mushrooms, garlic and pepper. stir and let it cook for a couple minutes while stirring.

Step 4Add your beef stock parsley flakes and bay leaves. Simmer for about 1 hour

Step 5Add your marmite and allow to simmer for another 15 to 20 minutes.

Step 6While the beef mixture is on its final simmer, cook your rice according to package.

Step 7remove bay leaves add water to corn starch and make a gravy in the beef mixture. Serve over your cooked rice Enjoy!!
