My friend, Deanna showed me how to make this recipe. I love it and make it about every other week, if not more. Riced cauliflower is an excellent substitute for rice. I have even made my own from putting a fresh head of cauliflower through the grater on my food processor. This is a great low carb food.

Ingredients

  • 1 pound ground beef
  • 1/2 cup onion, diced
  • 1 package taco seasoning mix (or make your own)
  • 1 can rotel (diced tomatoes & green chilis)
  • 1 package riced cauliflower
  • 1/2 cup water

How To Make keto spanish rice-a-phoney

  • Step 1
    Brown the ground beef and onions together in a skillet. Pour off any grease after the beef is browned and the onions are soft.
  • Step 2
    Add the taco seasoning and water. Mix well and let simmer for a few minutes until the water is gone.
  • Step 3
    Microwave the riced cauliflower (the package we get is 4- 3/4 c servings) two times for 3 minutes each time, stirring in between.
  • Step 4
    Add the cauliflower & rotel to the mixture and stir well. Let simmer a few minutes to blend the flavors. Garnish with sour cream, black olives, jalapenos, cilantro, cheese, or whatever your favorite taco toppings are.
  • Step 5
    This makes 4 servings
