Too many apples...so time to experiment! I had some delicious leftover Steel cut oatmeal from breakfast. This is a much healthier filler for meatloaf than the usual white bread. I also had some apples I just picked up from the orchard yesterday so I added a small apple. Fed this to my husband and son and, well, it is gone...

Ingredients

  • 2 pounds lean ground beef
  • 1 small apple peeled cored and diced
  • 1 cup leftover cooked irish oatmeal
  • 1 - carrot shreddded
  • 1 - package onion soup mix
  • 1 teaspoon seasoned salt of choice
  • 1/2 teaspoon ground black pepper
  • 1 - egg
  • 2 cloves garlic, minced finely

How To Make harvest meatloaf

  • Step 1
    Preheat oven to 350
  • Step 2
    Mix all ingredients thoroughly and form into loaf. Put in center of 9x13 pan and bake for 1-1/2 hours or Internal temp to 160.
  • Step 3
    Serve with mashed potatoes and corn for a comfort food dinner that you can feel good about!
