Too many apples...so time to experiment!

I had some delicious leftover Steel cut oatmeal from breakfast. This is a much healthier filler for meatloaf than the usual white bread. I also had some apples I just picked up from the orchard yesterday so I added a small apple. Fed this to my husband and son and, well, it is gone...

  • 2 lb
    lean ground beef
  • 1 small
    apple peeled cored and diced
  • 1 c
    leftover cooked irish oatmeal
  • 1
    carrot shreddded
  • 1
    package onion soup mix
  • 1 tsp
    seasoned salt of choice
  • 1/2 tsp
    ground black pepper
  • 1
  • 2 clove
    garlic, minced finely

How to Make Harvest meatloaf


  1. Preheat oven to 350
  2. Mix all ingredients thoroughly and form into loaf. Put in center of 9x13 pan and bake for 1-1/2 hours or Internal temp to 160.
  3. Serve with mashed potatoes and corn for a comfort food dinner that you can feel good about!
