Too many apples...so time to experiment! I had some delicious leftover Steel cut oatmeal from breakfast. This is a much healthier filler for meatloaf than the usual white bread. I also had some apples I just picked up from the orchard yesterday so I added a small apple. Fed this to my husband and son and, well, it is gone...

Ingredients
- 2 pounds lean ground beef
- 1 small apple peeled cored and diced
- 1 cup leftover cooked irish oatmeal
- 1 - carrot shreddded
- 1 - package onion soup mix
- 1 teaspoon seasoned salt of choice
- 1/2 teaspoon ground black pepper
- 1 - egg
- 2 cloves garlic, minced finely
How To Make harvest meatloaf

Step 1Preheat oven to 350

Step 2Mix all ingredients thoroughly and form into loaf. Put in center of 9x13 pan and bake for 1-1/2 hours or Internal temp to 160.

Step 3Serve with mashed potatoes and corn for a comfort food dinner that you can feel good about!
