greek cheese burgers with tzatziki
Tzatziki- cucumber relish- delicious! Recipe from a friend many years ago- she has since passed away in her sleep.(95) This relish should be made at least 2 hours in advance.

- TZATZIKI:
- - make this 2 hours before you want to use it. can be made the day before:
- 3 cups greek yogurt
- 2 medium seeded cucumbers,peeled and sliced(can use seedless cukes)
- 3 tablespoons lemon juice
- 1 clove garlic
- 1 tablespoon chopped fresh dill
- 1 tablespoon kosher salt
- 1/4 teaspoon black pepper
- CHEESE BURGERS:
- 1 pound lean ground beef
- 1/3 cup athenos feta cheese or your favorite brand
- 1/2 teaspoon oregano
- 2 cloves minced garlic
- 1/4 teaspoon black pepper
- 1 large egg
How To Make greek cheese burgers with tzatziki

Step 1Tzatziki: Salt cucumber slices with the kosher salt in a bowl;stir to coat all. Set aside for 30 minutes. Rinse lightly and drain. Place cucumbers on paper towel to draw out more water. Wipe dry before using. Now in a food processor, add cucumbers, lemon juice, garlic,dill and pepper. Pulse to finely chop, stir into yogurt. Set aside for 2 hours. THIS RESTING TIME IS VERY IMPORTANT- check for salt and re-season if necessary, before serving. --- Cheese Burgers: Heat the grill or a skillet to medium-high. Mix ground beef and remaining ingredients; mixing well to combine. Shape into 4 patties and cook for 5-6 minutes on one side and flip and cook 3-4 minutes on other or until desired degree of doneness you like. Serve on a bun with the cucumber relish or serve the relish on the side- I like it in the bun with the burger.
