Tzatziki- cucumber relish- delicious! Recipe from a friend many years ago- she has since passed away in her sleep.(95) This relish should be made at least 2 hours in advance.

Ingredients For greek cheese burgers with tzatziki

  • TZATZIKI:
  • make this 2 hours before you want to use it. can be made the day before:
  • 3 c
    greek yogurt
  • 2 md
    seeded cucumbers,peeled and sliced(can use seedless cukes)
  • 3 Tbsp
    lemon juice
  • 1 clove
    garlic
  • 1 Tbsp
    chopped fresh dill
  • 1 Tbsp
    kosher salt
  • 1/4 tsp
    black pepper
  • CHEESE BURGERS:
  • 1 lb
    lean ground beef
  • 1/3 c
    athenos feta cheese or your favorite brand
  • 1/2 tsp
    oregano
  • 2 clove
    minced garlic
  • 1/4 tsp
    black pepper
  • 1 lg
    egg

How To Make greek cheese burgers with tzatziki

    Tzatziki: Salt cucumber slices with the kosher salt in a bowl;stir to coat all. Set aside for 30 minutes. Rinse lightly and drain. Place cucumbers on paper towel to draw out more water. Wipe dry before using. Now in a food processor, add cucumbers, lemon juice, garlic,dill and pepper. Pulse to finely chop, stir into yogurt. Set aside for 2 hours. THIS RESTING TIME IS VERY IMPORTANT- check for salt and re-season if necessary, before serving. --- Cheese Burgers: Heat the grill or a skillet to medium-high. Mix ground beef and remaining ingredients; mixing well to combine. Shape into 4 patties and cook for 5-6 minutes on one side and flip and cook 3-4 minutes on other or until desired degree of doneness you like. Serve on a bun with the cucumber relish or serve the relish on the side- I like it in the bun with the burger.
