I am mixing my cultures for this recipe we have the distinctly Eastern flavors of the hummus, and I am enhancing the beef with a mix of Korean spices. This is an excellent dish to serve at a casual get-together with family and friends. It is super easy to make, and you can cook up the beef a day ahead of time, and keep in the fridge until ready to serve. So, you ready… Let’s get into the kitchen.

- PLAN/PURCHASE
- 6 ounces fresh hummus, your choice
- THE VEGGIES
- 6 - 8 small cherry tomatoes, quartered
- 3 - 4 slices yellow onion, thinly sliced
- 1 tablespoon balsamic vinegar
- 1 tablespoon lemon juice, freshly squeezed
- THE BEEF
- 2 tablespoons gochujang
- 2 tablespoons tamari sauce
- 2 tablespoons rice wine vinegar
- 2 cloves garlic, minced
- 1 teaspoon ginger powder
- 2 tablespoons sesame oil
- 1 pound chuck steak, small dice, about 1/2-inch (1.2cm)
- ADDITIONAL ITEMS
- - lemon wedges
- - pita bread

Step 1Gochujang, or red chili paste is a savory, sweet, and spicy fermented condiment. The sweetness comes from the starch of cooked glutinous rice, cultured with saccharifying enzymes during the fermentation process. Traditionally, it has been naturally fermented over years in earthenware jars on an elevated stone platform. Although this condiment has sweet flavor notes; it also very spicy. If you have never worked with it before, I would suggest that you put half the recipe recommended amount into the sauce, and then give it a taste. We can always add more heat to a dish, but it is rather difficult to take it out. As this Korean condiment becomes more-and-more popular with Western chefs, it becomes easier to find in your local grocery store.

Step 3Gather your Ingredients (mise en place).

Step 5Toss the veggies with the vinegar and lemon juice, and reserve.

Step 7Add the gochujang, tamari, vinegar, garlic, and ginger powder to a saucepan over medium heat.

Step 8Allow the ingredients to simmer for 5 minutes.

Step 9Add the oil to a sauté pan, over medium heat.

Step 10Add the beef, and the spices to the pan, and sauté until the beef is thoroughly cooked, about 6 to 8 minutes.

Step 11Remove from the heat, and allow to come to room temperature.

Step 12When the beef cools, toss it with the veggies.

Step 14Get creative with the plating, and serve with pita bread, and lemon wedges. Enjoy
