Dinner 9/25/2011. These are leftovers from the night before. I needed a name for my dish. Colleen came up with a name. I'm dedicating this recipe to my friend. She is one extraordinary lady, cook and JAP member. Luv you Girl! sw:)

Ingredients

  • 1 pound leftover seasoned & cooked steak
  • 1 pound fresh asparagus
  • 2-4 large sunny-side up eggs
  • 1 large avocado, chopped
  • 2 medium roma tomatoes, chopped
  • 1 medium red onion, sliced
  • 1 tablespoon minced garlic
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons olive oil, extra virgin
  • 1 teaspoon cumin, ground
  • 1 small habanero pepper, fresh & chopped
  • 2 teaspoons everglades, seasoning

How To Make colleen's gussied up steak

  • Step 1
    gather ingredients. blanch asparagus in salty boiling water for 3 minutes. drain and put in ice cold water to stiop cooking
  • Step 2
    in a large heated skillet add evoo, onions, garlic & peppers. saute until veggies are soft. add blanced asparagus and 1/2 everglades. warm through. remove add steak and warm on both sides
  • Step 3
    in a small mixing bowl combine avocados, tomatoes, onion mixture, parsley, cumin & 1/2 everglades. fold gently. plate steak top with egg. add sparagus to plate and top with veggies and avocado..leftovers are served!
