Dinner 9/25/2011. These are leftovers from the night before. I needed a name for my dish. Colleen came up with a name. I'm dedicating this recipe to my friend. She is one extraordinary lady, cook and JAP member. Luv you Girl! sw:)
1gather ingredients. blanch asparagus in salty boiling water for 3 minutes. drain and put in ice cold water to stiop cooking
2in a large heated skillet add evoo, onions, garlic & peppers. saute until veggies are soft. add blanced asparagus and 1/2 everglades. warm through. remove add steak and warm on both sides
3in a small mixing bowl combine avocados, tomatoes, onion mixture, parsley, cumin & 1/2 everglades. fold gently. plate steak top with egg. add sparagus to plate and top with veggies and avocado..leftovers are served!
