I like the idea of the "thick" tortilla. My regular tortilla recipe was not as good as I liked this thick, so I had to fashion another one, this it IT!!

Ingredients

  • 4 1/2 c
    bread flour
  • 1/3 c
    plus 1 tablespoon vegetable shortening
  • 1 Tbsp
    baking powder
  • 1/2 tsp
    salt
  • 1 tsp
    diy taco seasoning
  • 1 1/2 c
    warm water
  • MEAT

  • 3 lb
    lean ground beef
  • 3 Tbsp
    (heaped) diy taco seasoning
  • 1 medium
    onion (diced)
  • 2 medium
    tomatoes (diced)
  • 1/2
    head lettuce (shredded)
  • 1 c
    each shredded cheddar & jack cheeses
  • 1 can(s)
    sliced black olives

How to Make Candi's Chalupa style taco's

Step-by-Step

  1. In large bowl mix flour, salt, taco seasoning.
    add shortening and blend well with hands, mixing as you would a meatloaf. Add water and mix with hand until it forms a solid soft dough. Cover and set aside while you prepare your meat
  2. Brown meat, 1/2 the onion and taco seasoning until no longer pink.
    preheat oven to "warm" or very low setting.
  3. knead your bread about 2-3 minutes, split into 10 balls and roll out to 1/2 inch thick. poke with fork all over 1 side.
    place in cast iron skillet on low on each side for about 30 seconds per side. I do not let these get "brown" spots, I keep them "golden"
    keep in tortilla warmer or bowl covered with towel
  4. fill each "chalupa" bread with meat mix on 1/2 of it, cover meat with cheese mixes, fold in half and wrap in aluminum foil.
    Place in oven for 10-15 minutes to melt cheeses and warm through.
  5. I serve with diced onion, tomato, shredded lettuce and black olives, taco sauces & salsa like a taco bar!
