I like the idea of the "thick" tortilla. My regular tortilla recipe was not as good as I liked this thick, so I had to fashion another one, this it IT!!
In large bowl mix flour, salt, taco seasoning.
add shortening and blend well with hands, mixing as you would a meatloaf. Add water and mix with hand until it forms a solid soft dough. Cover and set aside while you prepare your meat

Brown meat, 1/2 the onion and taco seasoning until no longer pink.
preheat oven to "warm" or very low setting.

knead your bread about 2-3 minutes, split into 10 balls and roll out to 1/2 inch thick. poke with fork all over 1 side.
place in cast iron skillet on low on each side for about 30 seconds per side. I do not let these get "brown" spots, I keep them "golden"
keep in tortilla warmer or bowl covered with towel

fill each "chalupa" bread with meat mix on 1/2 of it, cover meat with cheese mixes, fold in half and wrap in aluminum foil.
Place in oven for 10-15 minutes to melt cheeses and warm through.

I serve with diced onion, tomato, shredded lettuce and black olives, taco sauces & salsa like a taco bar!
