broccoli beef squares

Ingredients
- 1-1/2 pound lean ground beef
- 2 cups baking mix
- 1/2 cup cold water
- 3 cups shredded cheddar
- 1/2 cup onion, chopped
- 2 cups fresh mushrooms, coarsely chopped
- 1 box broccoli, frozen
- 4 - eggs
- 1/2 cup milk
- 1/4 cup grated parmesan cheese
- - salt and pepper
How To Make broccoli beef squares

Step 1Preheat oven to 350

Step 2Spray 9x13 inch glass baking dish with non stick cooking spray

Step 3Grate 3 cups of cheddar cheese

Step 4Place frozen broccoli in a colander and run hot water over it until ice melts, then set aside to drain

Step 5Start browning meat in a large pan, and while meat is cooking chop onions and mushrooms

Step 6Add chopped mushrooms, onions and 2 1/2 cups of cheddar cheese to browned ground beef

Step 7Mix remaining 1/2 cup cheddar with baking mix and water to make a dough, then press into pan

Step 8Spread beef mixture across dough then sprinkle with broccoli

Step 9Measure out milk in a 2 cup measuring cup and add Parmesan cheese,eggs and salt & pepper. Beat with a fork

Step 10Pour egg mixture evenly over broccoli and bake for 30 minutes or until eggs look firm and pull away from the sides of the pan
